Sumac has a lovely, nearly purple color, and a tart flavor that is reminiscent of vinegar or lemon. It is an essential ingredient in Middle Eastern cooking.
It pairs well with vegetables, grilled lamb, chicken and fish. Sumac is one of the main components in the spice mix za’atar, and is used as a topping on fattoush salad, and makes a nice topping on dips like hummus. Try using it in salads instead of lemon juice or to season grilled meat and fish. It’s also delicious sprinkled over hummus.
